Green Winged Beans (Psophocarpus tetragonolobus)
The green winged bean is a true garden powerhouse—beautiful, versatile, and entirely edible from root to tip. Native to Southeast Asia, this tropical legume gets its name from the four distinct “wings” that run along its crunchy green pods. The pods are tender and flavorful when young, with a taste and texture reminiscent of green beans or snow peas.
But the magic doesn't stop there: the leaves can be cooked like spinach, the flowers are edible and make vibrant garnishes, the seeds can be cooked like soybeans, and even the roots are edible, with a nutty flavor similar to jicama. It’s truly one of the most underappreciated all-in-one vegetables!
Winged beans thrive in hot, humid climates and love to climb—so be sure to give them a trellis. In addition to being delicious, they also enrich the soil by fixing nitrogen, making them a smart choice for regenerative gardens.
